Tom Ryan

Who is Tom Ryan? You may not have heard of him, but odds are you DO know him, or rather his work. If you’ve ever had a Stuffed Crust Pizza, a McGriddle, a Shaker Salad  or any other number of restaurant items, you’ve tasted his work.  To answer the question, Tom Ryan is not your typical restaurateur. He’s not a chef, didn’t study Restaurant Management and in fact, never expected to find himself in the restaurant business. By training, he’s a food scientist - earning degrees in flavor and fragrance chemistry from Michigan State University. During his Doctoral studies he became intrigued by marketing and consumer research which set him on the path of a lifetime.

Taking positions at P&G and Pillsbury, Ryan recognized the force of combining his technical knowledge with consumer insights. He spent hours chasing and evaluating restaurant trends, searching for the next big idea to bring to grocery store shelves. Along the way, he fell in love with restaurants, menu innovation and the creativity emerging in the restaurant landscape. 

Ryan joined Pizza Hut in the late ‘80s, creating products such as The Lover’s Line, Breadsticks, Chicken Wings, Sicilian Pizza and Stuffed Crust Pizza.  In the ‘90s he joined McDonald’s, bringing more products to the market place and around the world - McFlurries, The Dollar Menu and McGriddles, just to name a few.  Searching for new challenges Ryan moved on to Colorado. He joined the Quiznos team and brought record setting sandwiches to the marketplace while planning his next move.

In 2007 Smashburger was born, a new concept Ryan and his partners designed to focus on the next generation of burger consumers. It became an industry icon for quality, growth and business acumen and was twice named by Forbes as “America’s Most Promising Company.” Smashburger has won countless awards for best burgers and earned Ryan a spot on Gourmet Magazine’s, “Top 25 Food Entrepreneurs of the Last 25 Years” list. In 2018 Smashburger was acquired by Jollibee Foods Corporation, a Manilla based restaurant powerhouse.

In 2012, Tom’s Urban - a full service, urban concept designed to provide great multi-ethnic food, craft beers and cocktails was opened by Ryan and partners.  This namesake concept opened its second site in Los Angeles at LA Live in 2014. Later that year, they opened on the Las Vegas Strip followed by three more Tom’s across the country. Currently Tom’s Urban is reconcepting to Tom’s Watch Bar, a premium viewing sports experience.

Today Tom holds the title of Global Taste Advisor to Jollibee Foods Corporation, focusing on optimizing concept and menu elements. He also contributes strategic and growth based support to his namesake, Tom’s Watch Bar Concept. When not focusing on his other work, Ryan spends his time thinking about his next monumental menu idea you may never ever know he created.

A former Fortune 500 executive, Sen led Papa John’s, to 4-years of record growth. He is an acclaimed “brand whisperer” and one of the top growth drivers in the brand and customer experience space.

Blaine Hurst, recently retired CEO of Panera Bread, a four-time Fast Casual Mover and Shaker, is a one of highest impact restaurant leaders of recent times, leading two of the largest restaurants in the U.S.

At Panera, he led the team that revolutionized guest experience through technology, (Panera 2.0), rolling out the largest loyalty program in the industry – MyPanera, on-line ordering, rapid pickup, and delivery from 2010 to 2015.  Digital ordering at Panera is now more than half of their sales.  He and his team grew Panera’s catering business to be the largest in the nation.  As a result, Panera was named the most innovative restaurant and named the 23rd most innovative of all companies by FastCompany.

As President of Papa John’s in the 90’s, he oversaw its rapid growth from 450 stores to nearly 3,000 in the US and 9 international markets.  And in 1998, he rolled out the first online ordering system available nationwide for any restaurant chain, generating more than $1 billion of annual revenue.

Blaine was a partner with Ernst & Young and founded one of their two research centers, the Center for Information Technology Planning and Development.

Today’s Blaine is the Vice Chairman and an advisor to Panera Bread.  He is a co-founder of Composite Ventures, a new venture fund focused on the future of retail and restaurant tech. He is an advisor to several early restaurant and technology companies and a board member of Women in Foodservice Forum, a board member of Oath Pizza and an investor/advisor for the Shepherd Hotel, a hotel project in Clemson, SC that has partnered with ClemsonLIFE in the employment of individuals with special gifts. Blaine’s son David, a special gifts young man of 32, inspires much of his work today.

He is also the author of 8 patents, has been a frequent speaker on the national stage and is a thought leader for restaurants, technology, big data, leadership and diversity and inclusion.  He is a proud Kentucky Colonel.

Allison Cocker currently serves as the Communications Manager at Salata Salad Kitchen, a built-to-order salad kitchen with more than 80 locations across Texas, Georgia, South California, Louisiana and soon to be North Carolina. 

Since joining Salata in 2017, Allison’s role has evolved from a focus on social media strategy and digital media to the development and ongoing strategic vision of the brand’s first loyalty program, Salata Tastemaker Rewards, the Salata mobile app, guest retention program, public relations strategy and crisis management. Since the launch of Salata’s mobile app in the summer of 2020, it has garnered more than 120K downloads and supported 36% growth of the loyalty program.

With more than 8 years of marketing and guest retention experience, Allison is passionate about the use of guest insights and consumer behavior analysis to drive frequency, engagement and meet key business goals.

She graduated from University of Northern Colorado with a B.S. degree in Recreation, Tourism, and Hospitality. After earning a Master’s degree in Tourism Management at Colorado State University, she went on to put her talents to work for the cannabis industry. Later, she was invited to join the Smashburger corporate team and is currently the Loyalty Manager for the successful Smashclub Rewards program.

His undergraduate degree in Mathematics and MBA from Harvard Business School gives him the unusual ability to both execute complex analyses and translate the results into ideas that business leaders can use.

For nearly 10 years, he has been working in the restaurant technology industry, specializing in the off-premise space. FAQs

Where will PXUX 2021 take place? 

The conference is being offered both in person and virtually. The in-person sessions will be at the Boston Marriott Long Wharf Hotel in Boston, Massachusetts. 

How do I register for the event? 

Fill out the registration form on this page. After completing the form, you’ll receive a confirmation email with event details. Please book your hotel as soon as possible, as the number of rooms we have reserved for a discounted rate is limited. 

Can I attend one day rather than both days? 

We pack both days full of information and fun. If you leave early, there is no credit or refund for one day of attendance. 

Are there special hotel rates? 

The conference takes place at the Boston Marriott Long Wharf Hotel, one of Boston’s premier locations. Located right on Boston Harbor and designed to reflect the maritime history of the city, the Marriott Long Wharf is steps from the Quincy Market, the Rose Kennedy Greenway, and the historic North End. It is truly the place to be. 

The venue has reserved a block of rooms for a discounted nightly rate of $325 per night, per person, plus tax, more than $200 off the regular rate. Use the hotel link included in the registration confirmation email. The hotel block closes on Monday, August 30th, or as soon as the rooms sell out, so be sure to book early. 

How do I get to PXUX? 

The closest airport to the event is Boston Logan International Airport (BOS). The event will begin on September 22nd at 7 a.m. EST and will conclude on September 23rd at 3 p.m. EST. For those attending the bonus Master Class, be sure to arrive a day early for the Sept. 21 event.

A popular option when coming to the hotel from the airport is the water taxi service – if you want something a little different and are not in a complete rush – learn more through Massport Water Taxi. 

Travelers can also use ride hailing or a taxi service to arrive at the Boston Marriott Long Wharf Hotel.  

Are meals included in the registration fee? 

Yes. On Wednesday, a delicious selection for breakfast, lunch, dinner, and snacks will be provided. On Thursday, it’s breakfast, lunch, and snacks. 

We will do our best to accommodate all dietary restrictions. Please indicate your preferences when you complete the registration form.

You may share the event link with a co-worker, but they will need to register on their own for the PXUX 2021 event. 

Will the sessions be recorded so that I can access them later?  

No, PXUX is a live event and sessions are only available in person or during the live-stream.  

Will I be able to ask questions and give feedback during the sessions? 

Yes, each session will include time for questions and feedback. We can’t wait to hear from you!

What happens if COVID-19 restrictions make travel difficult?  

The health and safety of our attendees is our top concern, which is why we are carefully monitoring the changing nature of the COVID-19 threat, and following guidance from health officials at the federal, state, and local level. While we continue our plans to host people here in Boston, we are aware that the situation may change quickly and are planning for that possibility as well. If things should change, we will inform everyone as soon as possible.
